Few treats disappear faster in our house than Auntie Jane's Baked Cinnamon Donuts. This much-loved family recipe was adapted from a traditional cinnamon donut recipe so Charlie could enjoy them safely despite his food allergies. Soft, fluffy and coated in a sweet cinnamon sugar topping, these donuts are free from dairy, egg, peanuts and tree nuts, making them a fantastic option for families managing food allergies. They're simple to make, freeze well, and are always the first thing requested for birthdays, playdates and special occasions.

Ingredients

  • 2 cups Orgran GF Plain Flour
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ½ tsp salt
  • Organ No Egg Replacer for 1 egg
  • 1 ¼ cup of safe milk alternative (e.g. coconut milk or rice milk)
  • 2 tbs Nuttelex, melted
  • 2 tsp vanilla extract
  • 115g Nuttelex, melted
  • ½ cup sugar
  • ½ tsp cinnamon

Directions

  1. Pre-heat oven to 170ºC.
  2. In a large bowl, sift together flour, sugar, baking powder, spices and salt.
  3. In a small bowl, mix the milk, egg replacer, melted Nuttelex and vanilla.
  4. Add liquid mixture to the dry mixture and whisk until just combined.
  5. Spoon the batter into the donut rings, filling each until just ¾ full.
  6. Bake for approximately 12 minutes if using a 12-ring donut pan. Allow a few more minutes if necessary.
  7. Remove from oven and allow to cool.
  8. For the topping, melt the Nuttelex in one bowl and mix the sugar and cinnamon in another.
  9. Lightly dip each donut in the melted Nuttelex and then coat with the sugar mixture.
  10. Enjoy immediately or store in an airtight container. Alternatively store them in the freezer and thaw them when required.
