Raspberry Banana Muffins

These Raspberry Banana Muffins have been a staple in our kitchen for years. I first discovered this recipe through the wonderful allergy community and it quickly became one of those recipes I knew I had to keep. After Charlie gave them his tick of approval, I printed the recipe, laminated it and added it to my treasured allergy recipe folder.

They're wonderfully soft, packed with sweet banana and bursts of raspberry, and are just as delicious warm from the oven as they are packed into a lunchbox the next day. They also freeze beautifully, making them perfect for busy families who like to have a safe homemade snack ready whenever they need one.

These Raspberry Banana Muffins are soft, fluffy and bursting with juicy raspberries and naturally sweet bananas. They're an easy allergy-friendly bake that's perfect for lunchboxes, morning tea or afternoon snacks. Made with simple pantry ingredie.

Ingredients

  • 150g Nuttelex
  • ¾ cup raw sugar
  • 2 tbsp chia seeds
  • 1/3 cup rice milk
  • 2 ripe bananas
  • 2 cups Orgran GF Self Raising Flour
  • 1 tsp baking powder
  • ½ cup rice milk, extra
  • ½ cup frozen raspberries or fresh raspberries or freeze-dried raspberries

Directions

  1. Preheat over to 180ºC.
  2. Prepare muffin tray with squares of baking paper or cupcake liners.
  3. Combine chia seeds and 1/3 rice milk in a small bowl and leave until forms a gel.
  4. Mix Nuttelex and sugar until pale with fork (use electric mixer if possible).
  5. Add chia gel and mix in well.
  6. Add mashed bananas and mix until combined.
  7. Sift in flour and baking powder.
  8. Add ½ cup rice milk and combine all together.
  9. Gently fold through raspberries.
  10. Spoon mixture into cupcake liners until ¾ full.
  11. Top with raspberries.
  12. Bake in oven for approx 30 minutes or until skewer inserted into centre of muffin comes out clean.
